Spirit
Meadowsweet is one of my absolute favorite plant to use in dishes from starter to deserts. I use to work with fresh flowers in combination with braised tarbots or freshfly cut on top of deserts.
This time back planning was needed as I wanted to use the dried flowers. Botanists advised to let it rest for a year before brewing, then it takes 6 months to brew and get to the perfect balance. Within my brewing process, I only start printing labels after a few years of iterations when the profile comes together. I decided to put the brewery on a break just before releasing the labels. Yet the few release where absolutely amasing... To be continued!
