''A multisensorial experience that delves into the world of Kombucha and the well-inspired brewing process of Leave Your Sword.''
SYNOPSIS
After a year of collaboration with the sommelier and documentary maker Vasco De Gamay, we are excited to present a documentative show that will play with your senses and elaborate on your understanding of Kombucha.
Leave Your Sword spent 7 years in Amsterdam perfecting its brewing technics. It has now achieved its goal: offering a different Kombucha, one that taste like the tea it was made from. Its kombuchas have overcome the vinegary taste and therefore allowed the tea to express its aromas through a single fermentation process. It is an interesting method especially when using super premium tea coming from top single estates around the world.
It is really the expression of the tea that Nicolas Adam looked for when he started the project Leave Your Sword. He thought we could do better than just creating “tea vinegar “ and diluting it using technics borrowed from the soda industry.
Add to that a background in biology which brought him to research in depth how yeasts and bacteria work and you get an innovative process to ferment the tea liquor.
After an amount of trials and errors, Leave Your Sword has perfected its method and we have to thank the community of customers, colleagues, friends and partners that also believed in its vision and supported the project.
From 2022, Nicolas started to present his work in international competitions like IWSC which pushed him even further especially in terms of stability. Most of his kombuchas have come back with an award but it is certainly the recognition of his peers that has meant the most to him. Meeting with brewers from all over the world opened the discussion, how can we produce better especially for the community?
A year ago, Vasco De Gamay knocked at the door of the brewery with the project to know more about Leave Your Sword and why its kombuchas were so different and so tea like while the competition had such a vinegary profile. “As sommeliers, we do understand vinegary taste as exposing the ferment to too much oxygen which help acetic bacteria to develop and take over the environment resulting in vinegary aromas.”
So, when he came, the idea was simple, let’s conduct interviews, film processes, get to comprehend the method and see what’s coming out.
What resulted was greater UNDERSTANDING and depth of KNOWLEDGE.
Now it’s time to share this work with the community.
CONCEPT
We’ll EXPLORE Leave Your Sword by tasting, watching, listening, and dancing.
The brewery will be transformed into a multisensorial environment.
You will go through an audio-visual experience while enjoying the unique taste of Leave Your Sword Kombucha.
For the event, Nico will prepare some Onigiris and make some kombucha based cocktails of its own making.
